Sausage, Spinach & Tortellini Soup {Boston MA Baby & Child Photographer}

This delicious recipe was posted on my old blog before it went bye bye and since it’s my favorite I’m posting it again for all those that missed it. This soup is perfect for the winter months. Spinach is a good winter green food and always fresh this time of year. You can substitute the spicy chicken sausage for spicy pork sausage if you wish since I haven’t been able to find spicy chicken sausage in my grocery store and that is what the originally recipe calls for.

First a picture to tantalize those taste buds 🙂

Ingredients:

1 8 oz package of cheese tortellini

1 cup of spinach

40 oz. of chicken stock/broth

1 cup of dry white wine (I used Chardonnay)

6 cloves of garlic,  minced

1 cup of chopped tomatos

1 package of spicy chicken sausage (or whatever kind you prefer)

 

 

Directions:

Brown the sausage in a stock pot until cooked through

remove sausage, set a side and slice into pieces when tortellini cooks

Add garlic and cook for 2 minutes

Add wine and broth and scrape brown bits off bottom of pot

bring to a boi for 2-3 minutes

add tortellini and cook for 5 minutes

add sausage, chopped tomatoes and spinach

Optional: stir in 2 tbsp of butter to give it a more rich taste.

 

This is a great soup to make when you have a head cold, the garlic and spicy sausage clears you right up! Enjoy!
